- Combine cream, milk, sugar, 3 teaspoons of lemon zest, and salt in a saucepan. Cook over medium heat, stirring occasionally, until sugar is dissolved and the mixture begins to bubble around the edges.
- Ladle about 1 cup of the cream mixture into the egg yolks and whisk vigorously to temper the eggs.
- Pour the egg and cream mixture back into the pan and whisk well to combine.

- Whisk the mixture thoroughly just before churning it into ice cream and then transfer the frozen mixture to a freezer-safe container.
- When ready to serve, add a drizzle of olive oil and 1ml of the Raspberry tincture to the ice cream. Top with a pinch of salt and lemon zest!
