2 Easy One Pot Meals:
Springtime Sheet Pan Salmon Recipe
Ingredients:
- 3 medium potatoes, washed and halved
- 2 tbsp olive oil
- 8 asparagus spears, trimmed and halved
- 1 10oz container of cherry tomatoes
- 1 tbsp balsamic vinegar
- 2 5oz salmon fillets
- 2-3 basil leaves
- 2-4mL of Organic Daily Support CBD Oil
Instructions:
- Preheat oven 400F
- Add potatoes and 1 tbsp of olive oil into an ovenproof dish and roast for 20 minutes or until brown.
- Toss the asparagus in with the potatoes, then return to the oven for 15 minutes.
- Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil on top and return to the oven for a final 10-15 minutes until the salmon is cooked.
- Top with basil leaves and CBD oil to serve.
Bright Barley Soup Recipe
Ingredients:
- 2-3 tbsp extra-virgin olive oil
- 1 yellow onion, finely diced
- 2 garlic cloves, finely chopped
- 2 celery stalks, thinly sliced
- 1 cup chopped fresh dill leaves and stalks
- 1-2 tsp sea salt and black pepper
- 1 cup pearl barley
- 6 cups vegetable stock
- 3-4 tbsp lemon juice, plus extra wedges to serve
- 2oz baby spinach
- ¼ cup crème fraîche
- â…› tsp pure CBD Isolate
Instructions:
- Heat a large pot over medium-high. Add 2 tbsp olive oil and onion stirring until softened, 2 to 3 minutes.
- Add the garlic, celery, half the dill and ½ teaspoon salt and stir until fragrant, 1 to 2 minutes.
- Add the pearl barley and stock and bring to the boil.
- Cover, reduce heat to medium and cook, stirring occasionally, until the barley is swollen and tender, 25 to 30 minutes.
- Turn off the heat. Add the lemon juice, and season with salt and pepper. Taste and make sure the seasonings are to your liking, adjusting salt and lemon as needed.
- Stir in the spinach, allowing the residual heat to wilt the leaves.
- Ladle the soup into bowls. Mix together the crème fraîche and lab-tested CBD isolate then add a dollop on top also adding the remaining dill.
- Drizzle generously with olive oil and serve.
